Edamame Toast
SAVORY ITALIAN

EDAMAME TOFU TOAST

INGREDIENTS:

  • 1/2 package Mori-Nu Edamame Flavored Silken Tofu, Firm (refrigerate remaining tofu)
  • Choice of fruits, vegetables, nuts, seeds, sauces, and spices (see recommendations right)

PREPARATION:

  1. Toast bread to preference.
  2. With a fork, smash and spread tofu onto each slice of toast, dividing the tofu evenly between the 2 slices.
  3. On one slice, layer the ingredients from the SAVORY ITALIAN list.
  4. On the other slice, layer the ingredients from the SWEET STRAWBERRY list.
  5. Serve immediately with a fork and knife!

STRAWBERRY BANANA SMOOTHIE

MOCHA MOUSSE

INGREDIENTS:

  • 2-1/2 cups Mori-Nu Silken Tofu - Firm, mashed
  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 Tbsp. freeze-dried instant coffee granules
  • 1 tsp. orange zest
  • 1/2 tsp. ground cinnamon

PREPARATION:

Put all ingredients into a food processor; blend until very smooth and creamy. Spoon about 1/3 cup of the mixture into 6 small individual dessert cups. Cover and refrigerate for at least 1 hour before serving.

SWEET GARLIC WASABI DRESSING

INGREDIENTS:

  • 1 package Mori-Nu Silken Tofu – Soft
  • 2 Tbsp. soy mayonnaise
  • 2 small garlic cloves
  • 1 Tbsp. agave nectar
  • 1 Tbsp. onion powder
  • 1 Tbsp. garlic powder
  • 1/4 tsp. wasabi powder
  • 1 tsp. Himalayan salt

PREPARATION:

Blend all ingredients in blender until smooth. Store in an airtight container in the fridge for up to 1 week.

STRAWBERRY BANANA SMOOTHIE

INGREDIENTS:

  • 1 package Mori-Nu Silken Tofu – Soft, Lite Firm, Firm, or Organic
  • 1 small ripe banana
  • 1 10 oz. package frozen, sweetened strawberries, partially thawed, including liquid
  • 1 tsp of sugar (optional)

PREPARATION:

In a blender or food processor, combine all ingredients. Whip until smooth. Serve chilled.

I specifically bought this type of tofu for making “taho”. Its a filipino pre-breakfast snack eaten with hot/warm brown sugar syrup with small bobas yum! You buy it from a taho vendor on foot shouting TAHOOO!!! They carry a bamboo pole with an aluminum buckets on each end and they’ll keep on yelling taho while walking around the neighborhood until buyers will yell it back to show they’re interested but an army of little kids with huge smiles on their faces calling out “taho taho” are the usual patreon of the product. One bucket contains the freshly cooked soft tofu and the other holds 2 containers inside - hot sugar syrup and bobas. You get to choose if you want more/less bobas and syrup so it’s stored separately. It’s served in a plastic cup.
I just realized i can make one using a soft tofu (tried a ready made in a filipino grocery - ewww). This product is my first try and i loved it. The texture though is not silky smooth. It’s like it has been frozen then thawed but the taste is still good. All you need are small pearls (store bought or homemade) and sugar syrup. I just cook the bobas in the sugar syrup until transluscent then scoop out the tofu (around 1/3 of the box per serving for me). I think the tofu is ready to eat but i still simmer it for atleast 5 minutes just to be sure.

For me, this product is perfect for making recipes that call for milk or butter. I can have neither. It was works great in making tofu pudding, tofu ice cream, and more. 1/4 cup works great as a binder in recipes that call for eggs. It is a great substitute. Find more recipes on the Internet.

This stuff is the best for making vegan yogurt, mayo, salad dressing or sour cream. Blend a box with 3 T of lemon juice and thicken with 1/2 t xanthan gum if you want, and you now have a non-dairy, non-egg alternative that you can use for plant-based recipes. Way cheaper than buying separate vegan items for the above, it's shelf-stable until you blend it, and it tastes great. We are whole food plant based, and we use 1 or 2 boxes a week. Best of all, unlike other Mori Nu silken tofu, there are no soy protein isolates, which some people think are not as healthy. This is pretty much just soy.

Also, I used to drive all around town to find this stuff and it was often out of stock. Now, I just order it on Amazon for a pretty good price and never have to worry about not having it around when I need it. When I run out, I get another 12 boxes in 2 days. Fantastic!

I absolutely love Mori Nu tofu, and this soft tofu is no exception. It's incredibly silky, creamy, and soft. I use it in sundubu jjigae (I can't find extra soft tofu anywhere), ramen, desserts, and with rice. I took a star off because this variety of Mori Nu is hit or miss. Most of the time it's the perfect silky texture, but sometimes it looks like it's been damaged in shipping, like it got too cold or something, and it's a really nasty stringy texture and basically inedible. If you buy it, make sure you open a box right away and make sure it's the correct texture so that you don't miss the return window, just in case it did get messed up.

I love to blend a whole package up with fresh lemon juice, a little tahini, soy sauce, scallions, fresh herbs and garlic for a delicious sauce/dressing to pour over everything. There are endless possibilities to turn this tofu into a low-fat creamy dressing.

These Tofu saved me so much fridge space since they can be stored in pantry! Although it’s harder to take it out from the box, I would still keep buying them just for the space they free up!

Perfect for what I got these for--making SoonDuBu! Yum! Spicy, savory Korean soup! The package is a little annoying, but that's how it's kept so fresh, I suppose. A good pair of kitchen shears is needed. Really, once you get one end open, that's all you need. It'll slide out or you can scoop out what you need. It's best if you store any unused portion in a separate container and submerged in fresh water--will make it another few days but no more. Very delicate.

The boxes in the case expire July 18, 2023 but had already gone bad. I have ordered this before and it was fine. This time the tofu in the box was very watery, and when I dumped it out to turn it into a sauce, I saw it was grainy. The color was off. I whipped it and it was grainy liquid as opposed to the creamy substance normally. I need a replacement batch now.
