Particularly strong yeast strain with a very high alcohol tolerance (18% vol.), Low volatile acidity and acetaldehyde production, good resistance to low temperature fermentation 10-30°C (50-86°F). Low nutrient requirements (nitrogen and fatty acids).
This yeast strain confers body and roundness thanks to its high glycerol production and promotes the development of fresh and clean aromas. Allows obtaining pure and pleasant aromas thanks to a straight fermentation. Excellent to produce white thermo regulated and sparkling wines processed by traditional or Charmat methods.
WINE STYLES: Ideal for wines produced in big quantity. Production of young wines. Production of high alcohol white and red wines, in which the winemaker wants to keep freshness and varietal aromas while controlling fermentation temperature. Pasteur Champagne is one of the best strains to avoid sluggish fermentation and to restart stuck ones with remaining residual sugars thanks to its ability to assimilate fructose and to resist to alcohol.
DOSAGE: 5g Sachet Makes 20 - 23L; ALCOHOL TOLERANCE: Up to 18%; FERMENTATION TEMPERATURE RANGE: 10-30°C (50-86°F)
USAGE: The rehydration time should be between 20 to 25 minutes. This strain should be rehydrated in ten times its weight of sugared water or in a mixture of one-third of must and two-thirds of water. The mixture temperature should be 38/40°C (100/104°F). Stir during 20 minutes. Slowly sprinkle the culture media into 3 times the weight of the must in order for the yeasts to adapt to their new fermentation media (temperature difference, osmotic pressure, SO2), then wait for 10 minutes. This mixture can be added directly into the fermentation tank with uniform mixing. The difference of temperature between the rehydrated yeast and the tank should not exceed 10°C, optimum being 5°C.
STORAGE: Shelf life of unopened vacuum pack at room temperature (20°C, 68°F) is up to 2 years. If kept refrigerated (4°C, 45°F), shelf life will exceed 2 years. After opening, use within 4 weeks. Store an opened package tightly sealed, under refrigeration, removing as much air as possible.

Use Recommendation Fermenter with regular kinetics avoiding peaks of temperature. Respects varietal character and is adapted to full-bodied reds such as Bordeaux varietals. We've been making wine for about five years and have used Red Star almost exclusively. We've tried other brands, but found that Red Star provides a cleaner, more neutral fermentation (no off-flavors). Will continue to use this brand for all of wines.

I've been making 5 gallon bucket batches of dry fruit mead and this yeast works like a charm. One packet per bucket, add honey and fruit and water, come back in a week and voila you've got some great mead.

Red Star is a known brand for baking/rapid rise yeast. I don't have a wine making kit, but in a pinch, I used the wine yeast as a substitute in my bread maker. The bread rose just fine and made a perfect loaf.

I have been using this yeast for years in my wine and mead fermentations. This yeast is great for getting high alcohol percentage. Its meant for brewing strong wine. I used to just dump a couple cups of sugar and half a packet of this yeast into store-bought jugs of juice to make a quick 1-2 week wine. Its probably the easiest way to get into brewing yourself and can be done with about $10 worth of materials in your closet. Just order this yeast and an air lock, go to the store and buy some apple juice and sugar. Then just ferment it in the jug with the air lock hot glued to the lid.

I've had a lot of honey sitting around for a while so I decided to make a mead with this yeast as soon as it arrived to my door. I made a 5 gallon batch and used the entire packet for the 5 gallons. Before adding the yeast, I revived it in about 1 cup of warm water and a tiny bit of sugar. They yeast fired right up and were ready to go. I added it in earlier today and its already happily bubbling away in the corner.

This has long been my go to yeast for getting high ABV wines. Its cost effective and works really well. It makes a pretty clean flavor too but I think that has more to do with what you're fermenting than it does with the yeast. This yeast showed up highly active and is consistent with my previous experience with red star yeast. 10/10 Yeast. I recommend storing it in the fridge.

Ordered this not to make wine, but to make other beverages such as ginger ale. Regular bread yeast does work for the purpose, but can ferment a little to rapidly and also dies rapidly, so it leaves heavier flavors without getting quite to the sparkliness that I prefer. This yeast worked better for making these drinks. The fermentation was slower and more consistent, and didn't die off so quickly. The flavors of the final product (I made ginger ale) were much lighter and less bready. This yeast would work well for other light fermented beverages such as apple cider or mead.

The packages were fresh and the yeast was active. Exp. date on the packages I received was 1/2026, so more than a year shelf life.
