I was able to make excellent prickly pear and cranraison wine using this yeast it tasted like a fine blush! I think the recommendations of one packet of yeast for up to 5 gallons is a little low I doubled it when it didn't seem to be fermenting too actively in the first few days. Nonetheless I think this is a good starting yeast culture for a beginning winemaker and/or someone who wants to dive into fermenting other fruits. I will order again!

I like to take fresh grape or apple juice and let it sit in a 2-liter soda bottle for a day or two at room temperature. The natural yeasts will carbonate the juice and give it a very slight fermented flavor. The alcohol content will be negligible but the fizziness and flavor are just awesome. Unfortunately when I bottle my grape juice all of the natural yeasts are destroyed by the high temperatures. That's where this Red Star yeast comes in. I dilute my bottled juice to the proper sweetness and add 1/8 tsp of this yeast. Within about a day the bottle becomes nice and hard meaning its well carbonated. The stuff tastes amazing. I do the same thing with store bought apple juice (no preservatives, since they will kill the yeast). I do add about 1/4 cup of sugar per 2 liters of juice in order to offset the sugar consumed by the yeast. I had tried bread yeast with this method but the flavor was too strong and detracted from the final product. This wine yeast has a very mild flavor and works great with both grape and apple juices.

Are used this used while following the directions of a recipe I found on the Internet for making plum wine. Furthermore, I had followed those very same directions and activated the yeast using a little bit of the juice heated to 100 degrees.

The next day I had a lot of activity in the air lock. I had added nutrient and some Tannen as well as this used, and even though my plum wine is very young, my wife and I both agree that it's the best plum wine I've ever made. We can't wait to see what it's going to be like next year after its matured.

This yeast took my plum wine to about 12 and a 1/2 percent alcohol, leaving just a small amount of residual sweetness.

A very mild wine yeast, This is not a bad thing by any means and worked for what I wanted. I came across about 15 pounds of mixed berries this winter and decided to make a triple berry wine, I wanted to keep a lot of the berry flavor and so I needed a mild yeast in order to do that. This yeast will not ferment nearly as long as a lot of other yeast and is pretty temperamental with temperature also. 5 gallons of berry wine fermented for about a month and a half and came out with a low alcohol content to my normal batches with my favorite yeast "Pastuer" but like I said it did what I wanted.

I do recommend this yeast it is quick to start but also quick to stop which is perfect if you need a delicate touch.

Used this for a Gewurtztraminer and was really pleased with the results. I normally use another brand of yeast, but could not find exactly what I wanted. This fermented completely dry in 9 days at 66-68 degrees and left the typical Gewurtz flavor and aroma.

5.0 out of 5 stars Who knew yeast could make the difference?!?

My husband enjoys brewing his own beer. I am not a beer drinker, so he tried making mead, sake, and ginger beer for me. A friend gave us a package of the Blanc to try with the mead. It is amazing the difference this yeast made in the taste. It is smooth and brings out the sweetness of the honey. I then bought more of the Blanc yeast to use in the making of sake and ginger beer. What a great improvement on taste!! I won't need to buy any commercial brands now, as we have found the secret ingredient needed for all my favorites.

I love this; it has become my go to for white, and blush brews. There is virtually no foam at all, just a little bubbling. I used this with pear, the final product was so wonderfully aromatic, and the taste was superb. It made you just want to drink glass after glass of it. There was a nice level of alcohol as well, about 9-10%. However, I made 6 gallons and only used one package. The instructions say one package will do up to 5 gallons so if I had used two I would probably have gotten a higher alcohol percentage. Nevertheless, even with one package it was wonderful.
