Raw & Vegan – Our kimchi is never heated and can be enjoyed by people on the vegan, paleo and keto diets! We make our vegan kimchi using traditional practices but WITHOUT the use of fish sauce, shrimp and anchovies (often used in heritage recipes). We also make sure to NOT include wheat, rice or sugar, which is also commonly used.
Traditionally Fermented - We ferment in micro-batches, hand cut the vegetables and NEVER ferment in plastic to ensure that there is no contamination from plasticizers. We pack all our products in glass jars. We also never use sugar or vinegar in the process, it’s all wild fermentation!
