Bottarga care & characteristics

Our products are packaged with the finest care. Bottarga can travel and be safely kept in ambient temperatures. Keep refrigerated for longer preservation & to preserve color and cure level. Once opened or exposed to air, bottarga will continue to cure with time, making it darker and sharper which is completely normal. Tightly plastic wrap, removing all air from wrap or vacuum seal for best re-preservation results, then refrigerate or freeze. Enjoy at room temperature. Slice with a sharp non serrated knife to avoid shredding.

Bottarga is completely organic and may contain white (salt deposits), or dark spots & veins on its' surface membrane which is completely normal. You may carefully remove the consumable membrane before serving, which will remove veins & surface discoloration. The images provided are to give you an idea of packaging and product quality, but every individual piece will look different in shape, size & color because of the products' organic nature.

Have never purchased bottarga before, only having tasted it once at a dinner party. Delivered a day early. Not much of a bulge in the envelope. Disappointed that it was so much smaller than expected, but thought that the intensity of flavor would make it last quite a while. But, no, although the flavor is unique and savory, after having grated it on pasta, I realized quickly that at twenty-five dollars a pop we'd get about three or four two-person servings out of it. It's best sliced and eaten by itself, but that wasn't our intended use. To sum up: we'll never have to do that again...and we won't. Saving our pennies for truffles.

This is the first time I bought bottarga online and this is why I only bought the small size of this Sardinian Gold bottarga to try it out. Turned out that it was quite delicious! We were worry about the smell because sometimes bottarga could have a strong flavor. Turned out this brand is just right. We shredded half of our purchase into flakes and another hald cut into small slices. The flakes mixed with olive oil into a big bowl of al dente spaghetti; and decorated the dish with the bottarga slices. Beautiful and delicious! I will definitely order it again in future.

I bought this bottarga from the same seller three times before (might've been about 3 months interval each) and it tasted good and I had no complaints. However, the latest one I received was very ,very hard and did not taste good, unlike the other bottarga I used to eat over the years. I usually eat small piece of the twin bottarga treated egg in the sack a bit by a bit as it is. When I finished the half side of this bottarga, I started getting the red very itchy bumps on the several parts of my body. It took several weeks for those itchy bumps finally disappeared. Other food I was eating was all the usual food I eat. Therefore I concluded this one must have been the cause of my allergic reaction.
I think somehow this bottarga I received must have been a very old one Amazon must've kept for itself.
Next time I would buy a fresher one directly from the distributer itself, not from Amazon. Sorry Amazon.

Does one add water to reconstitue? Or shave it like a truffle? I should have undertaken to get instructions. It is dry. It was fine. Not quite what I expected. I suspect it’s good stuff. I just did not know how to use it right. No instructions on package.
