I put the yeast in the fridge the day it arrived, and used it a couple of weeks later. Great results so far. My pomegranate wine took a bit longer to start, but then again, I'm using no yeast support whatsoever, just organic cane sugar (meaning, I didn't add raisins, or any other yeast food). The same is true with the pineapple wine I started, but that one took off within 12 hours.

I can't tell what the flavor will be like yet, but the fermentation smells pretty clean, so I'm expecting the same in the finished wine, a nice clean fruit wine. I'll likely try their other strains after I get a chance to taste this one in a few months.

I decided to make wine over the winter and this is a strong working yest. I start it in a small amount of the must at 100 f. for 5 minutes. This yest will give you good results with wine and mead. I have a new hobby.

This is an aggressive little yeast. I use this to brew my mead. I have not yet had a batch that didn't come out dry. You are going to want to use a bit more of the sugary stuff than you think with this. It has not failed me yet.
