This strain guaranties a quick start of the fermentation by rapidly settling into the must faced with indigenous microflora. Good alcohol resistance (till 15% vol.), recommended for fermentation without temperature control thanks to its ability to ferment within a large temperature range 14-30°C (57°-86°F). Optimum resistance to all nutritional deficiencies (musts poor in available nitrogen) and to difficult conditions (strongly clarified musts, high SO2 content).
Neutral strain regarding the aromatic profile. Variety respect. Selected for its ability to give very clean aromas and characterised by a low production of volatile acidity and acetaldehyde.
WINE STYLES: Ideal strain for big volumes of wine when winemakers are mainly looking for a secure fermentation. Well adapted to the production of high quality red and white wines, in which varietal aroma complexity is desired. Optimum for the production of full-bodied red and white wines.
DOSAGE: 5g Sachet Makes 20 - 23L; ALCOHOL TOLERANCE: Up to 15%; FERMENTATION TEMPERATURE RANGE: 14-30°C (57°-86°F).
USAGE: The rehydration time should be between 20 to 25 minutes. This strain should be rehydrated in ten times its weight of sugared water or in a mixture of one-third of must and two-thirds of water. The mixture temperature should be 38/40°C (100/104°F). Stir during 20 minutes. Slowly sprinkle the culture media into 3 times the weight of the must in order for the yeasts to adapt to their new fermentation media (temperature difference, osmotic pressure, SO2), then wait for 10 minutes. This mixture can be added directly into the fermentation tank with uniform mixing. The difference of temperature between the rehydrated yeast and the tank should not exceed 10°C, optimum being 5°C.
STORAGE: Shelf life of unopened vacuum pack at room temperature (20°C, 68°F) is up to 2 years. If kept refrigerated (4°C, 45°F), shelf life will exceed 2 years. After opening, use within 4 weeks. Store an opened package tightly sealed, under refrigeration, removing as much air as possible.

My dad starts making homemade wine every year around this time. When I saw that the brand was Red Star I already knew it was excellent quality from a brand that I trust. This yeast has worked every year to produce some of the best homemade wine that I've ever tasted. If for any reason this batch of yeast is any different than the high quality product that I'm used to I will update my review accordingly. Overall, I think this is a wonderful company with consistently great products. I think the price is very fair for a product that's been around awhile because it works. Five stars!

While I wait for a big batch of apples with which I will make cider, I decided to try this yeast out in a foccacia recipe. Well, other than taking 15 minutes to proof rather than the typical bread yeasts' 5 minutes, this yeast is an excellent leavener and made a delicious yeasted foccacia. I think it took slightly longer for the initial rise as well, but this yeast is a great substitute for bread yeast in a pinch.

I got this yeast for my batches of apple cider this year, and it worked very well. I could see the results right away, so I know this was a very good culture. It's so handy that it comes in 10 packets, so I only need to open the ones I'm going to use this year. According to the expiry date, I'll be able to use the rest next year and they should still be good.

Red Star Premier Blanc has been my yeast of choice for making mead, but I have been wanting to try some variations over the winter to see how other yeasts fare.

This pack of Premier Classique arrived quickly and the best-before date is 2 1/2 years away, so I will have plenty of time to test and compare.

We are deciding to give a shot and making some kombucha drinks with this Red Star Premier Classique Wine yeast. The wine yeast was able to rehydrate in water well and seemed to do its thing in the fermenter!

I love Red Star yeast. It is by far one of my favorite brands that has excellent varieties of yeast. The Classique Wine Yeast does not disappoint. I made persimmon and pomegranate wine and they both delivered about 12-15% ABV. 1 packet (5 grams) makes 5 gallons of wine. I love Red Star products and will be a lifelong customer. Highly recommend.

I rehydrated the yeast in water. A short time later I had a few bubbles. I added some country wine must to it. A few minutes later I had foaming. Good viable yeast. The expiration date is 2 years, 5 months from now.
