After lasts year’s pickles went too mushy for much enjoyment, I vowed I would solve the squishy issue for this year.
I tackled it from every direction I could find on Google.
There were 4 simple and effective solutions:
* Use Calcium chloride (pickle crisp) which is a firming agent
* Crinkle cut your slices to give the calcium chloride more surface area to do its job
* Cut off the blossom end as there’s a natural enzyme in cucumber blossoms that make them squishy
* Add a grape leaf as it neutralizes the above enzyme

I canned crunchy pickles! This and low temperature water bath and I canned crunchy dill pickles! No longer tied to refrigerator pickles! I will be using in everything pickled now (ie, pickled jalapeños slices).
