Kveik is the original, traditional dried yeast! The LalBrew Voss strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980’s and generously shared it with the wider brewing community.
Very fast fermentations are achieved within the optimal temperature range with full attenuation typically achieved within 2-3 days. The flavor profile is consistent across the entire temperature range: neutral with subtle fruity notes of orange and citrus.

CHARACTERISTICS

Dry brewing yeast typically contains less than 7% water. For most strains, 1g of dry yeast contains a minimum of 5 billion viable cells, but the number will vary slightly from batch to batch.

STORAGE

Dry yeast is packaged under vacuum in 500g packs or 11g sachets and must be stored dry. Exposure to humidity and oxygen will affect the viability and vitality of the yeast. Once a pack or sachet is open, use immediately for best results. If kept sealed under vacuum and stored under appropriate conditions, dry yeast can be used until the indicated expiration date (2-3 years after manufacture).

DRY PITCHING

Dry pitching is the preferred method of inoculating wort. This method is simpler than rehydration and will give more consistent fermentation performance. Simply sprinkle the yeast evenly on the surface of the wort in the fermenter as it is being filled. The motion of the wort filling the fermenter will aid in mixing the yeast into the wort.

I've always had good luck with LalBrew yeasts, so I bought this to brew a Sahti. Kveik yeasts like a higher fermentation temperature, so I fermented my Sahti at 100F. Fermentation was completed in a few days and I bottled it after a week. Turned out quite well.

Strong yeast. Fermentation began within 8 hours and boy did it take off! Good thing I had a blow-off tube connected to the air lock as the foam really rose. Looking forward to bottling.

I read a Zymurgy article about Kveik brewing yeasts and was mostly intrigued about the part where you can brew in 100 deg F weather and it won't hurt the brew! Any home brewer knows one of the most Difficult things about brewing is keeping the wort at the recommended temp for the yeast to work best; THAT problem is just keeping the wort WARM enough for the KVEIK yeast to work, as it prefers temps between 90 and 104 deg F! So I keep this yeast fermenting in the non-airconditioned garage where it can be as warm as it likes; AND it is FAST! Most yeasts you feel good if you see a hint of bubbles through the airlock by sometime Next DAY... with KVEIK you see bubbles within 1-2 HOURS of pitching, and it is usually DONE within 2 days, if kept warm enough! So it can be bottled within a week of brewing, vs 2 or more weeks for most brews... however, due to my brewing schedules, I have continued transferring brew from primary to secondary, and thus still 10-14 days from kettle to bottle, probably not necessary, but brewing is still a weekend thing, and that 7 day interval is still there.... VOSS Kveik has a distinct flavor unlike any other yeast I have used, not a bad flavor, just different. Seems to work best with northern european type ale or honey ale recipes, though this weekend I am going to try it on a Kolsch brew...

The dry Kveik seems to work as well as the liquid yeast. Ferments clean with lager like results in less than 10 days at room temp.
